Pop OS is great because of up to date kernel and drivers, and they even have a specific version created for nvidia gpus, on disadvantage is that gnome version is a bit old, but its very stable at least

While technically POSSIBLE, how viable is it to run Adobe apps, especially Premiere and After Effects, on Linux

I've been playing CDDA for a few days now, and you know what? This game is amazing in all aspects (except for UI and graphics). It's hard enough, sometimes scary, and very interesting in general. Highly recommended! (And it's free)
